I think that the one at the top is your best one! I like how you added more contrast between the the night and the type. I think that you could take it further from the original though.
i really like the font and picture, they go really well together! the only thing i can think of is maybe putting it on a flag like in the medieval days.
I like that you just modified the original logo instead of changing altogether. Making the knight head a more subdued gray was a good idea, since then you could overlap with text.
All three of these are good designs. I like the top one best, personally. Maybe work on the font so that it stands out more from the background picture.
I agree with Molly. I think that may be having a jouster with the joust at an angle would be cool...time consuming, but cool. It might add an element of balance. also the knights head is really far in the background.

Alignment. Keep in mind that this looks like a muted letterhead, as opposed to being the simple, bold logo.
